Produced by a community of small farmers and processed by 5th generation producers at Mooleh Manay estate, this honey sun dried coffee is special for many reasons. Entirely shade-grown, amidst a lively mix of native spices and fruits, it comes from Sirangalli, a scenic village and biodiversity hotspot nestled in the Pushpagiri range of the Western Ghats.   

Post harvest, ripe red cherries from these lots were taken to the estate’s processing unit, where they were fermented in cherry form. Using a waterless eco-pulper preserved most of the mucilage. The coffee was then dried on patios, with regular raking and controlled exposure. Once it reached 11%-12% moisture content, it was stored in gunny bags and later sent to a dry mill for hulling.  

We chose to roast it medium to bring out a fruit-forward experience with medium bitterness and acidity, and an aroma and sip that reminds of berries. In every fruit-forward sip, you’ll also notice the richness of salted caramel and the sweetness of honey. The medium body and syrupy mouthfeel later unfold into a nutty finish which ties everything together. Best brewed using a pour over or an AeroPress, this is a medium roast that's more than just coffee; it's a testament to the fruits of collaboration.
